‘Tis the season for bad ass desserts, but why eat a bunch of sugar when you can have healthy and tasty protein cookies?

I have engineered this recipe to take care of those hankering cookie cravings when it starts to get dark and cold, with out causing you to get fat.

This recipe is very special, as it is whole grain, low sugar, and made with Syntha-6 Vanilla Ice Cream protein. (You can use your favorite vanilla protein if you like.)

Ingredients

  • 1 1/4 cup quick oats

  • 1  cup whole wheat flour

  • 3 scoops Syntha-6 Vanilla Ice Cream protein powder

  • 1 teaspoon baking soda

  • 1/4 teaspoon salt

  • 3/4 cup melted coconut oil

  • 1 cup Splenda (or equivalent of your favorite sweetener)

  • 1 large egg

  • 1/2 cup dried cranberries

  • 3.5 oz dark chocolate chips

  • 2 teaspoons milk

Directions

  1. Preheat oven to 350 degrees F.
  2. In large bowl whisk together flour, oats, baking soda, salt, and protein powder; set aside.
  3. In bowl of an electric mixer beat together melted coconut oil and Splenda until smooth. Add in egg, and milk. beat again for 2 minutes or until smooth.
  4. Add in whole wheat flour & oat mixture to the wet ingredients; mixing until well combined. Slowly add in dried cranberries and chocolate chunks.
  5. Drop dough with cookie scoop or by large rounded tablespoons onto ungreased cookie sheet. Bake 9-11 minutes or until edges just being to turn a golden brown. Do not over bake; we don’t want crispy cookies! Remove from oven and let cool a few minutes on baking sheet. Transfer to wire rack to finish cooling.

Makes 2 dozen.
